Easy Vegetarian Recipes

ROASTED VEGETABLES

Any veg of your choice (I used onion, pepper, carrots and broccoli)

METHOD

Cover a tray with oil and place on the veg evenly before covering with more oil and seasoning with oregano (or any herb).

Cook for 45-55 minutes at 180C (fan oven) or 200C (electric).

CURRY

(Serves 4)

Oil (I used olive)

1 tsp Garlic powder (or any other form of garlic)

2 ½ tsp Curry powder (I used medium)

1 tsp Cumin

1 tsp Paprika

1 Medium sized onion

1 Pepper

2 Carrots

Some broccoli

Frozen Vegetables

Vegetable stock (350ml)

1 Tin of chopped tomatoes

METHOD

Add oil to a sizzling pan, before adding the onions and the garlic powder and sautéing until they are translucent.

Add the curry powder, cumin and paprika and cook for another 2-3 minutes.

Add the rest of the veg and cook until they start softening.

Add the vegetable stock and the chopped tomatoes and cook them on the medium-high heat for 10 minutes.

Turn the heat down to a simmer and cook for a further 20-30 minutes or until the sauce has reduced to a thickness you prefer.

*Serve with rice or naan bread, or however you otherwise fancy.

FAJITAS

(Makes 4 fajitas)

Wraps

2 Peppers

2 Onions

Some broccoli

1 tin of sweetcorn

1 ½ tsp Fajita seasoning

1 tsp Cumin

1 tsp Paprika

Oil

** EXTRAS: cheese, lettuce, cucumber, salsa, guacamole, sour cream, etc. **

METHOD

Put everything into a sizzling pan with the oil and cook until the vegetables have become soft.

(Tip: whilst doing this, put the wraps in tinfoil and place into a warm oven to heat them up)
