University of Nottingham appoints new Chair in Brewing Science

The University of Nottingham has announced the appointment of Professor David Cook to the AB InBev Chair in Brewing Science, following the departure of Professor Joanne Hort earlier this year.

David has been an academic in the International Centre for Brewing Science (ICBS) at the University of Nottingham since its inception in 2005, working alongside former Chair Katherine Smart to help establish Nottingham as a global force in Brewing Science Teaching and Research.

Professional development

As Brewing Course Director David co-authored and delivered the University of Nottingham’s ground-breaking continual professional development courses for brewers, featuring state of the art e-learning, coupled with short intensive courses held at the University. His research interests focus on the functionality of raw materials in brewing with particular expertise in their flavour and sensory impacts, as well as related topics such as the flavour stability of beers.  A successful publication record and high profile conference presentations have made David a well-known and respected face on the international brewing science circuit.

Reacting to the news, Professor Cook stated: ‘I am thrilled to have the opportunity to lead the highly talented team we have in the ICBS and to continue the excellent work done by my predecessors. I am on record as saying that brewing research is of limited value if it is not both ‘applied’ in nature and responsive to the needs of the industry. Our work would have limited impact without a vibrant, profitable and technologically savvy brewing industry to work alongside; hence our aim is to work for the mutual good of the sector as a whole.”
