Students develop gluten free pie for pub chain
Students at the University of Nottingham have designed a new no-gluten containing steak & IPA ale pie that is available on pub menus across the country.
The pie, which was developed for country pub restaurant brand Chef & Brewer, was created by the students after they were tasked with creating the perfect pastry for a no-gluten containing pie.
Bettina Wolf, associate professor in biomaterials science at the University of Nottingham, said: “The challenge was to develop a no-gluten containing pastry without compromising on quality. Harnessing experience from the students and utilising knowledge from their course, the group developed an outstanding product concept achieving top marks.”
Kayte Whitehead, general manager at the Hutt in Nottinghamshire, said: “We’re really pleased to offer additional no-gluten containing options for guests. The steak and IPA ale pie is delicious, the students from the University of Nottingham have done a great job creating the no-gluten containing pastry, extracting the gluten without compromising on quality.”
