Happy National Vegetarian Week: Day 4

Happy Vegetarian Week to you all!  Courtesy of Ingenuity Lab member and Director of Nutri2Go, Jordana Chin, we will be sharing a recipe a day with you for the whole week!

We are a day out so look out for two recipe to try today! Roll those sleeves up and get cooking! Share your creations with us today!

Recipe Number 4:Baked courgette with lemon & mint


  • 2 Courgettes
  • 60g Lemon juice
  • 1 teaspoon Lemon peel, zest
  • 60g Red onions, sliced
  • 2 teaspoons olive oil
  • Fresh mint leaves
  • Salt and pepper

Cooking instructions:

  1. Preheat oven to 200°C fan-forced. Place courgette, onion, lemon rind, lemon juice and oil in a baking dish. Season with salt and pepper. Toss to combine.
  2. Roast for ~20 minutes or until courgette is tender.
  3. Top with mint leaves before serving.
