Happy Vegetarian Week to you all! Courtesy of Ingenuity Lab member and Director of Nutri2Go, Jordana Chin, we will be sharing a recipe a day with you for the whole week!

Recipe Number 4:Baked courgette with lemon & mint
- 2 Courgettes
- 60g Lemon juice
- 1 teaspoon Lemon peel, zest
- 60g Red onions, sliced
- 2 teaspoons olive oil
- Fresh mint leaves
- Salt and pepper
- Preheat oven to 200°C fan-forced. Place courgette, onion, lemon rind, lemon juice and oil in a baking dish. Season with salt and pepper. Toss to combine.
- Roast for ~20 minutes or until courgette is tender.
- Top with mint leaves before serving.
